Eating well when your calendar is full

· by Hannah Fennel

Three glass meal-prep jars layered with quinoa, beans, and roasted vegetables

“I’d eat healthy if I had time” is the sentence I hear most — from surgeons, founders, and parents of four alike. The fix isn’t more time. It’s one focused 90-minute session a week that removes every weeknight decision.

The Sunday system

Cook one grain, two proteins, and a tray of roasted vegetables while a sauce simmers beside them. That’s it. Everything below assembles from those parts in under ten minutes.

  • Grains (25 min, hands-off). A big pot of brown rice, quinoa, or farro. Cool fast, refrigerate flat.
  • Proteins (30 min). Sheet-pan chicken thighs plus a tray of spiced chickpeas — one oven, two trays.
  • Vegetables + sauce (20 min). Whatever roasts well, plus a tahini-lemon or salsa-verde jar that makes everything taste intentional.
“You don’t need more willpower on Wednesday. You need a fridge that already decided for you on Sunday.”

Jar lunches that survive the week

Layer dressing at the bottom, grains and beans next, greens on top. Sealed jars stay crisp four days — grab one each morning and lunch is solved before your first meeting.

Emergencies still happen. Keep frozen vegetables, eggs, and tinned fish on permanent standby: a ten-minute fried-rice or omelette beats delivery every single time.
