Going meat-free a few nights a week is one of the simplest upgrades you can make — for your health, your wallet, and the planet. These five dinners share one rule: every ingredient comes from a normal supermarket, and nothing takes longer than 30 minutes.
1. Charred-corn fiesta bowls
The client favorite. Char corn directly over a gas flame or in a dry skillet until blackened in spots, then slice it into bowls of rice, black beans, avocado, and lime crema. Smoky, sweet, and endlessly riffable.
2. Fifteen-minute pantry pasta
Chickpeas, cherry tomatoes, garlic, and a mountain of spinach tossed with short pasta and parmesan. The starchy pasta water becomes the sauce — no cream needed.
3. Sheet-pan halloumi and peppers
One tray, one temperature, ten minutes of chopping. Halloumi, bell peppers, red onion, and smoked paprika roasted hard, served over couscous with lemon yogurt.

4. Golden lentil dal
Red lentils simmered with turmeric, ginger, and coconut milk. It tastes like it cooked all day; it took 25 minutes and one pot.
5. Breakfast-for-dinner frittata
Whatever vegetables are fading in the drawer plus six eggs and feta, finished under the grill. Serve with toast and call it a triumph.
Start with one meat-free night a week. Master it, enjoy it — then add a second whenever you feel like it. That’s the whole method.
